Street corn is a traditional Mexican dish known as “elote.”
The elotero, or street corn vendor, is one of the most popular people in many Mexican neighborhoods; as he brings his cart filled with steaming, fresh corn to villages and neighborhoods. People wait their turn, patiently salivating, as the elotero bathes the corn in a mayo/butter mixture and adds his specialty spices.
